Freshly Wilted Spinach Salad

Ingredients

1 pound of spinach

Bag of pine nuts

Fresh garlic

Olive Oil

3 limes or lemons

Salt and pepper to taste

Directions

In a sauce pan add olive oil (Put on medium heat)

Add one to two cloves of garlic either by using a press or hand chopped

Add pine nuts to the olive oil and garlic

Add a little fresh ground pepper for color and flavor

Sauté the garlic until it is translucent or soften

Mix in the spinach in batches (so as not to overflow the pan, the spinach will cook down quickly)

Toss the spinach so it come in contact with the oil to wilt it

While the spinach is wilting squeeze the juice from the three limes or lemons into a small bowl

Once the spinach is cooked down remove the spinach from the heat, pour in the lime or lemon juice. Salt and pepper to taste, toss and serve
